Written in food: Pepper Pizza Low-Carb

Low, Ma! No crust!

I know! Don't these look amazing? I sure thought so when the inspiration for this dish was sent to me via Facebook by my mother in law! The first time we tried them, and with a few minor alterations, I knew they had to be added to our regular rotation!

So, let me start off by sharing with you what stood out to me as I made them the first time. They were easy and didn't take much time, for one! But more then that, I loved that these provided my family with a low carb. option to pizza...and we love pizza...and I need low carb! I also loved how easy it was to "personalize" the pizzas, allowing each of us to get pizzas just the way we like them, some with less sauce, some with more cheese, and toppings for the picking! But what I also noticed was that it was a great, easy way to practice portion control AND they would be great for those nights your kids are in the kitchen with you!


ow, finally, before I reveal my ingenious recipe, I do want to disclose that this recipe may need to be slightly altered depending on how many people you are feeding, how much they eat and when taking into account any sides you may have with it (garlic bread is a good choice). Also, the size of the peppers as well as your own preference as far as how saucy you like your  pizzas will also make a difference.

So, without further ado...I present to you....the recipe for 4!


Ingredients:

5-6 peppers (1 to 1 1/2 peppers per person)

1 jar your favorite pizza sauce

1-2 bags mozzarella shredded cheese

1 can diced tomatoes (fire roasted works amazingly!)

Parmesan

garlic powder

chopped chives

EVOO (extra virgin olive oil)

Kosher salt

Your favorite toppings! Some suggestions are:

       mini pepperoni

       sausage crumbles

       diced onion

       diced fresh tomato

        pineapple tidbits


Directions:

Preheat oven to 350

Cut each pepper in half the long ways and seed each half

Place each half on a baking sheet

Drizzle EVOO over the peppers and sprinkle with kosher salt

Put in oven for 10 minutes to soften the peppers

Meanwhile, in a large bowl, combine the following

      pizza sauce

      canned diced tomatoes

      large couple of sprinkles of  Parmesan cheese

      1-2 sprinkles of garlic powder and chopped chives

Mix together

When peppers are ready to come out, spoon sauce mixture into each pepper half, taking care not to

           fill sauce over the lip of the pepper

Cover with mozzarella cheese

Top with toppings of choice

Place back in the oven  and cook at 350 for another 10-15 minutes, making sure pizzas are cooked

            through and cheese is melted.

Pull pizzas out of oven
